Mediterranean Egg Mug

This delicious Greek egg mug cup is packed with protein and ready in just 4 minutes!

1/2 cup chopped spinach
1 egg
1 egg white
3 tablespoons diced tomatoes
1 tablespoon crumbled feta cheese
1 tablespoon onion, chopped
1/8 teaspoon Greek seasoning

Spray a large microwave-safe mug with nonstick cooking spray. Add spinach and onion; microwave for 1-2 minutes, until softened. Dry up any excess liquid from the spinach with a paper towel. Add egg and egg whites and microwave for 1 minute. Stir and add all leftover ingredients. Microwave again for 1 minute or until eggs just set. Stir and allow to slightly cool before enjoying!
