Triple Coconut Spiced Oatmeal
The flavor of this oatmeal is very similar to the Chai tea. For a breakfast this delicious you will happily wake up every morning.
1 cup coconut water
3 tablespoon light coconut milk
½ cup old-fashioned rolled oats
Toppings:
1 tablespoon shredded coconut toasted (see Note)
1 tablespoon sliced almonds toasted (see Note)
1 teaspoon brown sugar
½ teaspoon ground cinnamon
1/8 teaspoon ground ginger
1/8 teaspoon ground nutmeg
Microwave: ~ 5 minutes
Combine coconut water and oats in a microwave-safe bowl. Microwave on medium (50% power) for 5 minutes. Remove from microwave and mix well. Top with coconut milk, shredded coconut, brown sugar, cinnamon, ginger, and nutmeg.
Note: To toast coconut and almonds, add them to a dry non-stick skillet and place over medium heat. Every 1-2 minutes shake the pan to allow for even toasting. Once the almonds begin to brown and release an aromatic sent remover the pan from heat. Set aside until needed. In addition if you might want to toast more than one serving of the coconut and almonds to use on future bowls of delicious spiced oats or on yogurt.
